Another Sunday with Church over at noon and the rest of the day ahead of us...
We decided to take advantage of another opportunity to do something as a family that did not require money and also helped the food bank. Snowbird ski resort was having an "appreciation" day and tram rides were free with a donation of one can of food per person. Nicole and Chay had been on the tram before but it was a first for me. The ride was almost like an amusement park ride at times when the tram's incline increased. The view was amazing and it brought back memories and actually made me miss skiing and had me thinking that I really need to take up skiing again (if it weren't for the fact that I'm afraid I would break something since the last time I skied was at least 18 yrs ago). The temperature today was in the 70s again, comfortable but not hot like it was when we went to Gardner Village, and at first it was chilly when we stepped out of the tram at the top of the mountain but, in a few minutes we acclimatized and it felt warm. The cool breeze in the tram on the way down was actually refreshing.

Remember the Millers who made a donation to the survival of our backyard and received cookies as a Thank you? Well, they LOVED the cookies and today requested the recipe. So, I gave them a copy of the recipe I used and since it's ideal to always give the food item with the recipe, I made a small batch of sugar cookies. However, since they already knew what the cookies tasted like, I decided to make the "flaky" sugar cookies because they are quick to make and included that recipe also. Also, Sheila wanted the recipe and I needed to include a picture of the cookie along with the recipe, so I "killed two birds with one stone".
The recipe is a copycat recipe for sugar cookies at "Paradise Cafe and Bakery". I haven't been to this restaurant so I have nothing to compare it to.
Paradise Bakery Sugar Cookies
1 cup granulated sugar
1 cup icing sugar
2 cups shortening
3/4 tsp vanilla extract (I also added 1/2 tsp almond extract because it gives it more flavor)
1 egg beaten
4 1/3 cups cake flour (this is what makes it so flaky)
3/4 tsp baking soda
3/4 tsp baking powder
1/4 tsp salt
Mix together the sugars and shortening.
Mix on slow speed for 30 second.
Increase speed to medium and mix for 3 minutes. Slowly add vanilla extract and egg while mixing.
In a separate bowl, combine flour, baking soda, baking powder and salt.
Gradually add the flour mixture to the mixing bowl, mixing on slow speed until just blended. do not overmix.
Dough may be rolled out on lightly floured board and cut with cookie cutters or scooped with an ice cream scoop and placed directly on cookie sheet. If scooped, flatten with palm of hand.
Bake at 375 degrees F for 9-10 minutes. Cookies are done when small cracks appear. Ideally, the edges do not brown.
And for Jacqui, here is the recipe for the chicken enchiladas. And I hope Alana's turned out great today. I don't have the recipe written down anywhere because it's so simple but, I'm glad it is written down now because in the future, when I can't remember how to make this, my family will have the recipe and will be able to carry on...
Chicken Enchiladas
*Flour tortillas
*5-6 chicken breasts (boiled and then pulled into shreds) (that sounds like you need to really attack it but I just mean pull it into strips...)
*1 small or large can diced green chilis
*1 can cream of chicken soup
*1 16 oz container sour cream
*cheddar cheese (shredded)

*1 small or large can diced green chilis
*1 can cream of chicken soup
*1 16 oz container sour cream
*cheddar cheese (shredded)
Mix the green chilis, chicken soup and sour cream together.
Add the chicken.
Spoon onto tortilla and wrap up "burrito" style. (Roll up one end, fold in the sides and then continue rolling up)
Place in pan/casserole dish with fold side down.
Cover with cheese (generously of course).
Cover with foil and cook at 350-375 degrees F for about 45 minutes or until hot throughout. The sauce usually bubbles out when I make it and then I know it's ready. Remove the foil the last 5 minutes so that it can melt nicely. If you don't cover it with foil, your cheese will get hard (not good).

They all look so happy together...I'm assuming they are always like that.
Those photos look great...that is one thing we can't do here in an afternoon.
Looks like a fun time...I'm jealous
Sheila, I hit the wrong button and I don't think you got the completed posting. Read it again...
I think I'll try the sugar cookies today.
Certainly not good for any diet . . . oh well, I'm sure the kids will eat them before I get too many.
i recommend anything that you make to anyone! you are quite the chef! and i love it! feel free to pass any amazing recipes to me!

Can't wait to try these out!
ou didn't mention your Sunday excursion when I talked to you last night. Sounds like it was a fun day.
By the way I don't think we will leave home until Monday. The car still isn't ready. Will keep you posted.
Weather is a a bit cool but rather nice--no rain or snow -just some wind, What else!
Love to all. Blade is really growing.
Bye for now Love Mom
Can we get the recipe for the regular sugar cookies? I presume the ones you put on are the flaky ones!
If Alana says your stuff is '''a-OK''' then pass on the recipes.
In response to Ang.
You kids should do a cookie cutter exchange for your Christmas. I do this with Uncle Pat's family. (ONLY THE LADIES). One night after we had filled everyones stocking, we looked at ours and no one had filled ours. We decided that the women would all get together and buy a little stocking stuffer. This year it is something to pamper yourself. This is our seventh year...we had 'something in jar', 'something flat', 'popcorn', 'something for the kitchen','magnets' etc. These are something small and you buy the same thing for everyone (I buy 8 of one thing. It's really cool!
Then everyone has the same unique cookie cutter. It is fun because the next person announces at Christmas what the next year 'thing' is and so you spend all year looking for it...it is usually on sale!
Don't do the popcorn one because it is 'UGLY' seeing 8 different types of popcorn and you eat it all in one day...
ughhhshhgysdYUKKKY... kshjehduggg!
Woops...the most important part!
Great pictures of your fab' kids...!
Thanks Wilma for the recipes. Ya for some reason I didn't get the full post the first time.
I have a bunch of Christmas cookie cutters I got on sale that has been sitting in my basement. Of course I have a few packs...so I am ready for the gift exchange...or just a little give away.
I also have the letter cookie cutters, but unfortunately I only have one set of those...but after seeing Wilma's blog, I now know what to do with them. Thanks Wilma for all you creative ideas and recipes.
I'm not into the recipes like everyone else, but I liked the pictures and I think I can fix the picture that needs to be rotated. Or you could leave it and just add a comment about how they went down the black diamond ski slope - then you wouldn't have to rotate it.
I'll email you regarding the picture.
Wilma...I made the enchiladas TWICE.
The first ones were eeehhh..OK so the second time I used block cheese(they say the pre-shredded cheese is too dry.It was a tad bland so I added a fresh ground jalapeno pepper(with 2 small cans of green chilies) and minced a cupful of red pepper for color. I shredded the block cheese...This time it turned out great. I also shredded pre-cooked chicken that I bought at the rotisserie! Zak drove across the city to get a trayful...he thought it was good.
You sure have to be careful that you get pliable tortillas though!
Thanks....now I'm going to try the candy apples. Uncle Pat makes them and you can buy the cherry powder at Harlan Fairbanks (they have outlets in Calgary and Edmonton) They just had cherry in Edmonton...CHEAP...CHEAP...CHEAP!
Sheila and Sharon....don't buy any sticks because I have 1000 of them. Buy them from me. You could sell candy apples at your concession. I'll sell you 500 sticks.
OH oh....this blog is now becoming a KaEghsList.
AK, I'm impressed that you already made the enchiladas TWICE, sorry it took a second attempt... I wonder why the first ones were so bland... I may have to try it your way, but I don't know if I can handle the jalapeno, I'm a light weight when it comes to spicy.
You need to start a blog because I want to see a picture of the candy apple, and I think I need some of that powder. AND what is that list you mentioned?
Doug, I hope you can help me with the pictures! I saw a sign for a "white diamond" up on the hill but not a "black diamond" (which I was looking for as a backdrop for a picture). What is a white diamond anyway?
I think the first ones were bland because I used the whole 500 tub of sour cream.(I think it was a bit too much for the recipe.) The second batch was not spicy at all. Just put the pepper through the 'bullet' and cut the red pepper really small. The Jalapeno was like juice. Also, I didn't use enough cheese.
I think your M/D are leaving Monday so I will try to get some cherry powder to her before she leaves. I think Uncle Pat has some at his house.
The list is CRAIGSLIST where everyone sells stuff-on the internet...I was just trying to be funny!
I knew you were trying to be funny but I also knew that there was a list out there and I didn't want to miss out on anything!
I love the magic bullet but we have been through two of them...
Is the 500 tub 16 oz? The proportions have to be just right. Sometimes I have to adjust by adding more green chilis, or more soup...they have the jalapenos in a can also, I may try that.
thanks for working on the red powder for me!
I bought the red and they had green(lime) today so I will put it in the mail tomorrow. It's fairly light . One bag does 70-100 apples so we'll have to break it down a bit. Don't die when you see the sugar content. It is called apple magic.
The 500 mls is just over 16 ounces - yes probably more chicken soup would have been good. I'm not a measurer when it comes to cooking so....because it doesn't work isn't necessarily the recipe BUT THE COOK! (MOI)
